Bruschetta Cauliflower Gnocchi Sheet Pan
2 bags cauliflower gnocchi
1 package chicken meatballs
½ package frozen peppers and onions (I used the fire roasted)
1 jar bruschetta topping (pantry)
Holiday Hash Scramble
1 package frozen chicken breakfast sausage patties
½ tbsp oil
1 container holiday vegetable hash
½ tsp garlic powder
½ tsp salt
¼ tsp paprika
8 eggs
½ tsp salt
Preheat the oven to 425. Line a baking sheet with foil or parchment paper.
Add the cauliflower gnocchi, meatballs and about half of the bag of peppers and onions to the baking sheet. Add about half of the jar of bruschetta sauce and stir to coat.
Put in the oven and set a timer for 20 minutes. Stir once halfway through. While it’s cooking, make the breakfasts.
When it’s finished cooking, add the rest of the jar of bruschetta topping and stir.
In a large skillet, add four of the breakfast sausage patties and cook on medium heat. Cook on each side for about 3 minutes, until browned.
Remove the sausage and in the same skillet, add the ½ tbsp oil and the container of holiday vegetable hash. Add the ½ tsp garlic powder, ½ tsp salt, and ¼ tsp paprika. Cook for 10 minutes, stirring occasionally.
Spray another skillet and heat on low. Add the eggs and ½ tsp salt. Scramble over low heat until just set.
**I call it “Whole30ish” because even though all of the ingredients in the cauliflower gnocchi are compliant, some hardcore Whole30ers would say that it isn’t allowed because of the “pancake rule.” That rule states you shouldn’t recreate foods that aren’t allowed with compliant ingredients.
