Viral Ground Beef Cottage Cheese Bowls

I have been seeing this recipe everywhere and to be honest, I thought it looked really weird and kinda gross. Especially since I’m not the biggest fan of cottage cheese or avocado.
But for some reason, it really works! I wouldn’t skip the pickled jalapeños and hot honey drizzle on top, that’s what really made it for me.
Viral Ground Beef Cottage Cheese Bowls

Ingredients:
2 sweet potatoes
1 tbsp oil
3 tsp chili powder
1 tsp garlic powder
1 tsp onion powder
½ tsp paprika
2 tsp salt
1lb ground beef (96% lean)
1/2 cup frozen cauliflower rice
1 tsp cumin
1 cup cottage cheese low fat
2 avocados
Other toppings of choice (hot honey, pickled jalapenos, cilantro, hot sauce, etc)
Instructions:
Preheat the oven to 425 degrees F. Line a baking sheet with foil.
Mix together the chili powder, garlic powder, onion powder, paprika and salt.
Wash and chop the sweet potatoes. Add them to the baking sheet.
Add the 1 tbsp oil to the sweet potatoes and stir to coat. Add about 1 tbsp of the spice mixture to the sweet potatoes and stir to coat.
Put the sweet potatoes in the oven for 30 minutes.
While they are baking, cook the ground beef.
Add it to a large skillet on medium heat. Break apart as it cooks. When the meat is cooked through, add the cauliflower rice, the rest of the spice mixture and the 1 tsp of cumin. Cook for 2 more minutes.
Remove the sweet potatoes from the oven when finished.
Assemble the bowls with the sweet potato, beef, 1/4 cup cottage, and 1/2 avocado. Top with toppings of choice.
SUBSTITUTIONS
Sub for ground beef: ground turkey
Sub for cauliflower rice: can use any chopped veggie or omit
Sub for cottage cheese: greek yogurt
STORAGE
Allow everything to come to room temp and then store in airtight containers, like these.
I like using these containers to keep the toppings separate from the ground beef and sweet potatoes.
Store the avocado separately! Just cut up what you need for the meal, then store in a ziploc bag with the seed.

REHEATING
Reheat the ground beef and sweet potatoes in the microwave for 1-2 minutes, then top with the cottage cheese, avocado, and other toppings.
