Strawberry Shortcake Baked Oatmeal
Macros per serving: 280 cal, 8g fat, 34g carb, 4g fiber, 18g protein (*I used 2.5 oz Too Good vanilla yogurt per serving)
Servings: 4 servings
Time: 20 minutes
Ingredients:
½ pint strawberries
1 tbsp melted butter or coconut oil
2 tbsp honey
1 tsp vanilla extract
2 eggs
1.5 cup almond milk
1/2 tsp baking powder
1.5 cups rolled oats
2 scoops collagen powder
Vanilla greek yogurt for serving
Instructions:
Preheat the oven to 350. Grease your pan. You can use individual glass meal prep containers, or a baking pan.
Slice or dice the strawberries.
Mix together all of the ingredients except the yogurt.
Add the batter to the baking pan or meal prep containers. Bake until set, about 10-20 minutes (if doing just one larger pan it will take longer).
Serve with vanilla greek yogurt.

Can you use protein powder instead of collagen??
