Happy Thursday! So, I’ve had this recipe on my list to make for awhile and I kept avoiding it because… I don’t like quinoa. Or so I thought. It turns out, quinoa by itself is gross. Quinoa when mixed with yummy taco spiced beef, tasty veggies and covered in cheese- it’s delicious. And this recipe is ridiculously easy.
