Time: 30 minutes
Tools:
Skillet
Cutting board
Knife
Ingredients:
1-1.5 lb pork tenderloin
1/2 tsp salt
Pepper
2 tbsp coconut aminos
1 tbsp oil, divided
1 bunch of green onions
1 red bell pepper
1 head of broccoli
2 blocks of ramen noodles (uncooked, just the noodles not the seasoning packet)
Chopped peanuts (optional)
Sauce:
2 tbsp peanut butter
1/3 cup coconut aminos
2 tbsp lime juice
1 tbsp sriracha
1 tsp garlic powder
1/2 tsp ginger powder
1/2 tsp salt
Instructions:
Chop the white and light green parts of green onion. Cut the broccoli into florets and slice the red pepper.
Cube the pork into bite sized pieces.
Season the pork with 1/2 tsp salt, pepper and 2 tbsp coconut aminos.
Heat 1/2 tbsp oil in a large skillet on medium high heat. Add the pork tenderloin in a single layer. Sear on one side for about 3 minutes, then flip. Remove the pork when seared on both sides.
Add the other 1/2 tbsp of oil to the pan. Add the green onion, red bell pepper, broccoli and about 1 tbsp of water. Cover and cook for about 5 minutes, stirring occasionally.
While it’s cooking, cook the noodles according to package instructions. Drain.
Add the pork, noodles, and sauce to the skillet with the veggies. Stir until combined. Top with dark green part of green onion and chopped peanuts.
Stupid question, but 3 minutes in each side for the pork?
