I never thought I’d say this about a kale salad, but this recipe is seriously addicting. It’s my version of a salad from a cute salad restaurant here in Austin, but when you make it at home you can buy all the ingredients for 4 salads for the price of one from the restaurant! And it takes less than 15 minutes to throw together, so it’s really a no brainer.

MEAL PREP 101
The meal prep tip this week is more like a cooking tip that will help you with this week’s recipe. This week, in the recipe you will need to massage your kale. If your first thought was, “Wtf?”- you’re not alone.
Yes, you’re going to massage the kale with the dressing. This basically means you pour the dressing on and rub the kale with your hands until it has softened. Massaging kale makes it taste better, digest better, and it’s perfect for meal prep because it just gets better with time!
If you want, you can just massage half of the kale with half of the dressing, then do the other half when you need it.
