Hey there, meal preppers!
This week’s recipe is such a good one. Juicy, flavorful marinated jerk chicken, bright and tangy slaw, and savory coconut rice. It sounds fancy, but it really takes no more work than your typical chicken, rice and broccoli meal prep.
Healthy food CAN be fun and exciting- and making healthy food taste delicious is so key to helping you achieve your health goals. You’re more likely to eat the food when it actually tastes good.

MEAL PREP 101
“Don’t you get tired of eating the same thing everyday??” I get this question ALL the time. And my short answer is- not really.
For me, the benefits of meal prep and eating leftovers way outweighs the negatives- maybe getting bored of eating the same meal by the last day.
But if you’re not the same, that’s okay! Let’s talk about how you can still make meal prep and my meal plans work for you:
If you cook for more than just you- then this is easy! Lots of my subscribers follow the meal plan and share the meals with a roommate, significant other, friend, whoever. You may have to add an extra recipe in or eat out one night to have enough food.
If it’s just you that you’re cooking for, you can follow the meal plan and freeze a few portions of each meal. Not everything is super freezer friendly (like fresh veggies), but freeze what is and then you’ll have a freezer full of ready to go meals for another week.
