Christmas Morning Casserole
a base for all the mimosas
I’ve made a variation of this for years for every Thanksgiving and Christmas morning. Everyone loves it (even the kids) and you can customize it in tons of ways (check the notes).
It’s hearty but healthy, so you can feel like you’re starting your day off with some health. I mean, come on there’s vegetables in there!
Christmas Morning Casserole

Ingredients:
8 frozen hash brown patties
1 lb ground chicken or turkey breakfast sausage
2 bell peppers
12 eggs
1 tsp seasoned salt or garlic salt
Dash hot sauce
1 small container (5.3oz) of reduced fat cottage cheese
1/2 cup shredded cheddar cheese
Instructions:
Preheat the oven to 400 degrees F. Spray or lightly grease your baking dish. Add the frozen hash brown patties on the bottom of the baking dish. Put in the oven for 10 minutes.
While it bakes, chop the bell peppers. In a large skillet, add the sausage and the bell peppers. Break apart the sausage and cook until the sausage is fully cooked through.
Add the eggs, seasoned salt, hot sauce, and cottage cheese to the blender. Blend until smooth.
Take out the dish from the oven. Add the sausage and bell peppers to the dish in an even layer. Add the egg mixture. Sprinkle with the shredded cheese.
Bake for 20 minutes, until the eggs are set.
NOTES
Make it higher protein and lower fat by swapping some of the eggs for egg whites.
Add whatever veggies you like to this dish!
Instead of ground sausage, you can use cooked bacon or sausage links. Just chop them up and add them in!
Use any kind of shredded cheese, or even goat cheese or feta would be delicious.
