Happy Thursday, meal preppers! I love soup. I could eat it year round, but I know that’s weird. So I always get excited when the temperature dips below 85 degrees here and we can finally call it soup season!
However, I do not love how soup is often just some clear broth and tons of carbs and a rogue piece of chicken. An hour after eating that soup and you’re gonna be starving. That’s why I make this chicken and rice soup higher in protein and fiber. It tastes just a delicious as your favorite, comforting chicken soup but way heartier.
Also, this soup makes a big ol’ pot, so you can split into 5 servings if you want! If you do, the macros for that are in the notes after the recipe.
