Happy Thursday! I’m so excited to share this easy, yummy recipe and meal plan with you. If your life is as chaotic as mine right now, this meal plan is going to magically make you feel like you really have it all figured out.
Right now I’m all about the cozy, comforting recipes but I don’t want to overindulge during my regular week day meals. The recipe for this week is perfect- it tastes like broccoli cheddar soup but without all the fat and calories. It’s a meal you can feel good about eating all week long. It’s high in protein, veggie packed, and so delicious!

THE RECIPE
Cheesy Broccoli Chicken Bake
Servings: 4 servings
Macros per serving: 440 cal, 12g fat, 40g carb, 2g fiber, 43g protein
Time: 40 minutes
Tools:
Cutting board
Knife
Baking dish (either individual glass meal prep containers or 9x13 baking dish)
Ingredients:
1 lb chicken breast
2 cloves garlic, minced
½ tsp salt
¼ tsp mustard powder
¼ tsp paprika
Pepper
1 cup rice
1 cup chicken broth
1 ¼ cup almond milk
2 oz cream cheese
2 oz cheddar cheese
3-4 cups frozen broccoli
Instructions:
Preheat the oven to 400. Lightly grease the baking dish.
Cube the chicken breast. Season with the minced garlic, salt mustard powder, paprika, and pepper. Stir to evenly coat. Add to the baking dish.
Add the rice, chicken broth, almond milk, cream cheese, cheddar cheese, and broccoli.
No need to stir, but make sure the rice is fully submerged.
Bake for 15 minutes, then remove from the oven and stir. Add back to the oven and cook for about 10 more minutes, until golden brown on the top, chicken is cooked through and rice is cooked. If baking in one large pan, it will need to cook longer (probably about an hour, stir an extra time or two throughout cooking).
LAZY VERISION
It’s cute to make this in individual meal prep containers, but making it in one casserole dish would be easier (but will take longer to cook!)
SUBSTITUTIONS
Sub for broccoli: cauliflower, green beans
Sub for almond milk: regular milk, coconut milk, oat milk
Sub for broth: water
Can omit the mustard powder
STORAGE
Allow everything to come to room temp and then store in airtight containers.
REHEATING
Add a tablespoon of water over the top. Reheat for 1-2 minutes.
